Allium ursinum

Allium ursinum, commonly known as wild garlic or ramsons, is a bulbous perennial herb in the amaryllis family. It is characterized by its broad, bright green leaves and clusters of star-like white flowers that emit a strong garlic scent when crushed.

It is native to temperate regions of Europe and Asia, ranging from Ireland eastward to the Caucasus. The plant thrives in moist, slightly acidic deciduous woodlands and is widely recognized as an indicator species for ancient woodlands.

All parts of the plant are highly valued in foraging and culinary traditions, used fresh in salads, cooked in soups, or blended into pesto and garlic butter. Ecologically, it is an important spring food source for brown bears and wild boar, and serves as the primary larval host for the ramsons hoverfly.

Historically referred to as a healing herb by ancient Romans and early European tribes, it has a long tradition of folk use for digestive and respiratory ailments. In modern homeopathic and traditional practices, it is sometimes used to support cardiovascular health.

The broad leaves are traditionally used as an artisanal wrapping material to coat and flavor the rinds of specific regional cheeses, such as Cornish Yarg in England and Van herbed cheese in Turkey.

The species name and many common names translate to bear's garlic, originating from folk tales that brown bears specifically seek out and eat the bulbs to regain strength after winter hibernation. An alternative, though disputed, historical theory links the name to the Ursa Major constellation due to its northerly distribution.
